The gar meat is excellent, believe it or not. We could not save all of it, due to the heat though. We brought plenty home and have already eaten a good bit of it.

I've had gar that were caught out of the Huzzah and Current Rivers. I say it is better left for the turtles. Turtles need to eat too. Now, surprisingly, it was edible. Just a little tough in my opinion.

I don't think gar meat is too bad really. They eat mainly small fish; they're not a bottom feeder. My brother ripped on eating gar one time, so I substituted some cut gar fillets for bass and deep fried it. He didn't think it was bad at all until I told him what it was!
You can tell the difference from bass if it gets cold at all. It is really only good hot.
They are a little tough to fillet- I've found a pair of aircraft tin snips wors well to get through the armor.
